The Single-Screw Kneading Machine transforms steamed glutinous rice into mochi by kneading it with a single screw.
It is mainly used in the production of arare rice crackers, specifically to knead steamed glutinous rice, discharged from a vertical steamer, into a mochi-like consistency.
After forming the mochi, additional ingredients such as sesame seeds can be added during a second pass through the machine.
It can also be used for portioning mochi.
